Anzac biscuits are named after the Australian and New Zealand Army Corps which was established in World War 1. It’s said that they became the favourite because the ingredients (oats, flour, butter and sugar) were easy to get hold of and the biscuits stayed fresh during weeks of transport from wives and mothers to their husbands and sons on the front line in Europe and Africa. Other stories say that the cookies were made and sold to raise funds for the war effort.
Traditionally we enjoy eating Anzac cookies around Anzac day (25th April), the day we remember those to have served to protect us. But we enjoy them all year round.
