INGREDIENTS YOU NEED:
3 eggs
3 mashed bananas
190g butter
3 tbsp milk

EQUIPMENT YOU NEED:
Mixing bowl
Egg beater
Spoon
25cm round cake tin
Baking paper

IINSTRUCTIONS:
Preheat oven to 175c conventional / 155c fan bake.  Grease a 25cm round cake tin and line the base with baking paper.  Soften butter in a bowl. Add sugar from cellophane bag and cream until light and fluffy.  Add eggs and mashed bananas and mix to combine.  Heat milk until near boiling. Add baking soda from cellophane bag and stir until frothy. Add to mixture with contents of pouch and mix until combined. Place mixture lined tin. Bake 45 minutes. Cake is baked when a toothpick inserted into middle of cake comes out clean.

Riper is Sweeter
Use ripe bananas for the sweetest, most flavourful cake.

✔ Skewer Test
Insert a skewer or toothpick into the centre of cake to check doneness. If it comes out clean or with a few crumbs , its ready. If there is wet batter, bake for a few more minutes and check again.

This is becoming a firm favourite. We usually split the mix and make two loafs, one goes in the freezer, the other gets eaten straight away. Lovely with raspberries by the way :heart_eyes:
